The pyrene fluorescence probe was introduced in the formation of elastic gel from walleye pollock (Theragra Chalcogramma) skin. Results showed that the fluorescence intensity and 11/13 ratio of pyrene monomer both increased at first and then decreased in the sol of 6.67% with the increasing of pyrene concentration. The monomeric fluorescence intensity showed its maximum,when pyrene concentration reached 401μmol/L,while the 11/13 ratio had a high level in the range of 20N60μmol/L,and the values were very close. Pyrene Ie/IM ratio increased with the concentration increasing,and was lower in the range of 2-40μmol/L. Considering the three factors mentioned above,pyrene with the concentration of 40μmol/L was employed as the fluorescence probe in the gel formation from walleye pollock skin. The study indicated that pyrene I1/13 ratio could characterize the intermolecular cross-linking in the sol,and the gelatin point was 7h,but IdIM ratio couldn't. This 13rovided the important basis to characterize the dynamic formation of other fish skin aels.
