Abstract本发明涉及一种低脂型冰激凌及其制备方法。本发明产品低脂型冰激凌的组成及配比包括:奶粉3%~7%,木糖醇10%~16%,稳定剂0.20%~0.35%,乳化剂0.10%~0.25%,菊糖3%~8%,奶油2.0%~5.0%,麦芽糊精3%~5%,水58.40%~78.70%。该产品色泽乳白、口感细腻、风味独特,是一种优良的冰激凌新品种。本发明用菊糖的凝胶特性替代了部分脂肪,使冰激凌产品质构更为稳定,同时增加了脂肪感和顺滑度,具有更好的口感圆润饱满度和奶油感。
