The invention relates to the technical field of marine chemical engineering, in particular to chitosan quaternary ammonium salt containing organic acid salt as well as a preparation method and application thereof. Chitosan, 3-chloro-2-hydroxypropyltrimethyl ammonium chloride, sodium hydroxide, isopropanol, gallic acid, caffeic acid and ascorbic acid are used as raw materials; firstly, the chitosanis dispersed in isopropanol for swelling expansion; at room temperature stirring is performed for 4h; 3-chloro-2-hydroxypropyltrimethyl ammonium chloride and a sodium hydroxide solution are added; continuous reaction is performed for 12h; then, a proper amount of ethyl alcohol is used for precipitation; the chitosan quaternary ammonium salt is obtained; finally, the chitosan quaternary ammonium salt is dissolved in water; ion exchange with the organic acid salt is performed; a final product is obtained. The chitosan quaternary ammonium salt has the advantages that active groups in derivativesare added; the activity is high; the preparation process is simple; side reaction is little; the cost of the used materials is low. The research proves that the derivatives have good water solubility; the antioxidant activity is high; wide application values are realized in the industry of medicine and functional food health care, particularly cosmetics industry.
